Continuing on with this mini-series of great vegetable side dishes, I bring you the humble potato. I love how versatile potatoes are and how they marry so well with so many different flavor combinations. Not everything needs to be complicated, and these garlic dill roasted potatoes are easy to make, and addicting to eat!
I’m working on highlighting some delicious side dishes this month because I feel like they are often overlooked and under-appreciated. I whipped up this refreshing orange pistachio salad over the weekend and honestly could have eaten many servings of it. It is light and really highlights the powerful flavor of winter oranges.
Amongst all of the holiday treats this year, this was one of the shining stars of my family’s Christmas weekend spent together. With two birthdays on Christmas Eve, my sister and I schemed up a little woodland themed celebration, and I was on dessert duty. Now let me tell you, this gluten free coconut dream cake with vegan buttercream frosting was heavenly and delicious to the very last crumb. I already can’t wait to make this again!
I was recently gifted a bottle of sparkling rosé wine. It was a sweet gesture, but it’s been sitting on my shelf for a few months now and I’ve been wondering what I should do with it. I usually don’t opt for bubbly drinks, though I do love the way sparkling wine tastes. So it came down to two options: re-gift it, or get a little creative. Well, I opted for the latter, and the result is this delicious festive sparkling rosé cocktail. Mildly bubbly and completely flavorful.
Here we are, at the final day of Cookie Week 2017! I’m leaving you with the cookie recipe I think I have made the most this season: Triple Chocolate Peppermint Cookies. Yes, they do have three chocolates in them. No, that is not too many.
