Winter squash is amazingly multi-purpose and you can toss it an endless amount of things. It brings with it a unique sweetness, and some hearty vegetable. Quick Waldorf Salad

I eat salads almost religiously for lunch Monday through Friday. It’s not forced though. The truth is, I love salads. I’ll blame my mom for this – she has a salad recipe arsenal that would satisfy any craving.
