Cranberry Apple Stuffed Pork Chops

I am convinced that there is an infinite amount of ways to cook pork chops. One of those ways is stuffing them! It’s not only turkeys that can be stuffed! These Cranberry Apple Stuffed Pork Chops are an amazing fall dinner. And the best part? You only need four ingredients!

I’ve said this before, and I’ll say it again: I love pork chops. Seriously, they are so versatile, as well as inexpensive and yummy. I usually make these stuffed pork chops when I have some blue cheese I need to use up. I find that the flavor combo of blue cheese, apples and cranberries is one of perfection. You really can’t go wrong.

Cranberry Apple Stuffed Pork Chops

Easy and inexpensive, these 4 ingredient Cranberry Apple Stuffed Pork Chops scream fall and are a great weeknight dinner.
Servings 4 Servings

Ingredients

  • 4 Boneless pork chops, thick cut
  • 1/2 Cup Blue cheese
  • 1/4 Cup Dried cranberries
  • 1/4 Cup Apple, finely chopped
  • 1 Tbsp Olive oil

Instructions

  • Preheat oven to 350 degrees F. In a small bowl, combine the cheese, cranberries and apples.
  • With a sharp knife, slice your pork chop lengthwise on one side. Do not slice all the way through, it should create a pocket, like a pita.
  • Heat 1 Tbsp of oil over medium heat. Season chops with salt and pepper and sear for 3 minutes on each side.
  • Place chops in baking safe dish. Carefully spoon about two Tbsp of filling into each pork chop. Use a toothpick to help close the sliced part and keep it together. (You can use tongs, an oven mitt or a piece of foil to help hold them if they are too hot.)
  • Place in oven and bake for 25-30 minutes until internal temperature 145 degrees F.
