Spiced Bison Burger with Sweet Onions & Mushrooms

Another year, another bison burger recipe. You may recall this delicious Bison Burger with Caramelized Onions and Bacon recipe I posted last year. Well, this year I decided to kick it up a notch and toss in some extra heat and hearty mushrooms. One can never have too many burger variations, so here is a fresh one for you: a spiced bison burger.

After I fell in love with bison last year, I tend to get it as a special treat every so often, just to keep things interesting between the ground beef and ground turkey I usually use. The flavor of this burger is a happy marriage of spicy and sweet. Bison can take heat very well, so it’s seasoned with a heavy hand for the most oomph in each bite. And then topped with some pepperjack just for a little extra flair.

Meanwhile, the sweet onions and mushrooms are caramelized into a yummy topping that you’ll want to pile on high right on top. I love cooking these up on my cast iron skillet, especially since it isn’t grilling season. It gets that beautiful sear and cooks them evenly. I recently took the leap and made my own burger buns for the first time! I used this homemade brioche bun recipe from Dessert for Two, and will not be going back to store bought! Believe me, make a double batch and keep extras in your freezer for when you have a burger craving. A spiced bison burger is also perfect to make if you’re staying at home this weekend for the super bowl…Between all those nibbles and snacks, there needs to be a main dish, right?

Spiced Bison Burger

Spiced Bison Burger with Sweet Onions & Mushrooms

A delicious game day meal is this spiced bison burger with sweet onions and mushrooms. Full of sweet and spicy flavors and easy to throw together for a weeknight dinner. The flavors are sure to impress.
Servings 4 Burgers

Ingredients

Burger seasoning

  • 1 lb. Ground Bison
  • 1/4 tsp. Garlic Powder
  • 1/2 tsp. Chili powder
  • 1/2 tsp. Paprika
  • 1/2 tsp. salt
  • 1/4 tsp. Black pepper
  • 1 Tbsp. Oil

Burger assembly

  • 1 1/2 Cup sliced mushrooms
  • 1 Medium sweet onion
  • 1/2 tsp. white sugar
  • salt
  • 1 Tbsp. olive oil
  • 4 slices Pepper jack cheese
  • 4 Brioche Buns

Instructions

  • In a bowl combine all the burger seasonings (except oil) and ground meat and loosely combine. Divide into 4 balls and press into patties using the palms of your hands.
  • Heat oil in a cast iron skillet over medium heat. Place burger patties in pan and let cook for three minutes on each side.
  • Meanwhile, in a frying pan, heat 1 Tbsp. olive oil over medium high heat. Add onions, sugar and salt to taste and let cook for 4 minutes, stirring frequently.
  • Add mushrooms to onions and let cook for another 4 minutes. Set aside.
  • Once burgers are done, remove from heat, place cheese on top of each, cover pan, and let sit for one minute while the cheese melts.
  • Assemble the burger with the patties on the brioche buns, topped with the onions and mushrooms.

    This looks so tasty! Mushrooms and onions are my favorite burger toppings but I’ve never tried bison before. Maybe I’ll have to try something new this weekend!
