Vegan Layered Pumpkin Mousse

I’m not one of those pumpkin spice lovers per se, but I definitely think pumpkin pie is a holiday staple. But, it is also fun to mix it up sometimes and enjoy those holiday flavors in a new way! This vegan layered pumpkin mousse will not only satisfy that pumpkin pie craving, but is ridiculously easy to make.

With just four ingredients, this layered mousse is really hard to resist making. Also, if it even makes any sense, this is both light and airy and rich meaning a little bit goes a long way. You can also make a dairy version of this by substituting the coconut milk with 1 1/2 cups of cold whipping cream. I really believe that simple does the trick and that there isn’t always a need for tons of ingredients to create a decadent dessert!

Vegan Layered Pumpkin Mousse

This Vegan Layered Pumpkin Mousse is a decadent treat that won't take long to put together. Make it ahead of time for your holiday meals!

Ingredients

  • 2 Cans (13.66 oz each) Unsweetened Coconut Milk
  • 1/2 Cup White Sugar
  • 1 Can (15 oz) Pureed Pumpkin
  • 2 tsp. Pumpkin Pie Spice

Instructions

  • Put cans of coconut milk in refrigerator overnight, or at least for 4 hours.
  • Open coconut milk and put all of the solidified cream in a large bowl. Discard the watery liquid, or reserve for a different recipe.
  • Using a mixer, whip the coconut milk and 1/4 cup of the white sugar for about 5 minutes until it becomes light and aerated. Set aside.
  • In another bowl, combine the pureed pumpkin, 1/4 cup sugar and pumpkin pie spice. Add in half of the whipped coconut milk mixture. Beat with the mixer for about 2 minutes until well combined. Add more sugar to taste.
  • Using glasses or other dishes, layer the mousse, one layer of pumpkin, one layer of coconut cream, one layer of pumpkin. Top with a sprinkle of cinnamon. Store in refrigerator until time to serve.

    I feel the same way about pumpkin but I think I’d enjoy it in a DF layered mousse like this! Looks so yummy!
