Ah summer. So much fruit, so many ideas on how to use them all up! I feel like this has been one of the best peach years I have ever experienced in the PNW. They’ve all ripened beautifully and have had that perfect sweetness. This means they are also fun to cook with, not just snack on. These Pork Chops with Peach Salsa are a fantastic late summer dish with a little sweet and a little heat.

Pork Chops with Peach Salsa

With this recipe, the pork chops stay simple, and the salsa carries the meal home. It’s sweet, crunchy, juicy, fragrant, and spicy. A solid pork chop compliments these flavors beautifully. For some extra oomph, you can grill your peaches first. That brings out a certain kind of sweetness that is unlike anything else. Enjoy!

Pork Chops with Peach Salsa

Pork Chops with Peach Salsa

This super simple dish is a great way to use up your summer produce. Quick preparation with a pow of flavor.
Servings 5 People

Ingredients

  • 2 Peaches, diced
  • 1-2 Jalapenos, chopped (spice to taste)
  • 1/4 Cup Minced Shallot
  • 1/2 Cup Chopped red bell pepper
  • 2 Tbsp Lime juice
  • 2 Tbsp Fresh cilantro leaves
  • Salt and pepper
  • 5 Bone-in Pork Chops

Instructions

  • In a medium size bowl mix together the peaches*, jalapeño, shallot, bell pepper, lime juice and cilantro and salt. Stir and let sit in refrigerator.
  • Heat a large cast iron skillet with some oil over medium heat. Season pork chops with salt and pepper. Sear in pan for 2-3 minutes on each side until cooked through.
  • Let rest for 5 minutes, top with salsa, and serve.

Notes

* For extra flavor, grill your peaches before dicing!

    We love peach-anything, and this looks so delicious! I’m trying to wait patiently for the farmers market to open Saturday morning so I can get some fresh peaches before they are all gone.
